This cake is not the classic one. The only thing I checked in one of my cookbooks was how to make the pastry. The rest is my imagination. Actually that is so much fun to make something new and to experiment. I had cherries so why not make something yummy? The recipe is simple of course, but the cake was awesome! Just the thing you need if someone is coming over. And berries are summers must have! I served ir with a scoop of ice-cream.
225g wheat flour
100g soft butter
1 egg (This is what’s written in the recipe. But I don’t think that 1 egg will make it the-best-in-the-world-cake. So you can do with out it).
2g baking powder
Cherries. The more the better
4 table spoons of sugar
200g buttermilk (I used paniņas)
2 sliced bananas
100 g of flour
Perheat the oven to 180C degrees.
Make the pastry. Whisk the egg and sugar, add flour and baking powder. (Like I said, you can do with out the egg). Don’t mix for too long cause then the pastry won’t be so crusty! Put it in a plastic bag and leave in the fridge for at least 12 hours. (This time I didn’t leave it in the fridge. It was good but I advise you not to skip this step).
Make the filling. Well there isn’t anything much to write.. Just mix everything together! Oh, and while doing that, smile, cause every cake tastes better ir the cook smiled :)
Roll out the pastry and put it in a cake tin. Don’t forget to put oil on the tin before the pastry. Punch it with a fork. This is important because the pastry must breath, it needs air, so there won’t be any bubbles. Bake for about 10-15 min. Put sliced bananas on the pastry. Pour in the filling. Bake for 45-50 min.
I served it hot with an ice-cream. If you do that, the cake will be very soft and you will think it’s not ready. But it will be. The other option is to eat it cooled. Also very tasty!
P.S. Do not be afraid of new ideas, when you are cooking you are the chef so EVERYTHING you make will be good. Even if it tastes funny you will know what not to do.
