Hey you all!
This time very serious. Our teacher got very ill so we decided to see her in the hospital. Well, after preparing a card we almost got out of school but then our plan broke down cause, they God, she was out of there. So there we were with a card and some money left. I didn`t have to think much about how to spend the rest. And my classmates agreed that I could bake something.
This time I made the most mini yums I had ever made. There were around 110 mini muffins (chocolate and almond) and 80 Mascarpone cream filled “wind” cakes. And yet it didn`t seem THAT much.
And yes, a recipe will be given!
This rum I bought in Scotland. I always do that when I`m there. Tis IS THE BEST rum you can ever imagine. Ever. I should had put it more in the muffins but I was afraid that, you know, it would be to much. But it wasnt..
2 large eggs.
2 cups of flour.
1/2 cup of sugar.
2 teaspoons of baking soda.
1 1/3 cups of milk (I used whipping cream)
1/3 cup of vegetable oil (I used butter)
1 teaspoon of vanilla.
1/2 teaspoon of salt.
100g grinded almonds.
For the topping see the recipe bellow.
Preheat your oven to 190 degrees.
In a large bowl, combine cooked and grinded almonds, flour, sugar, baking soda, salt and vanilla.
In a separate bowl, combine the eggs and milk.
Add the egg/milk mixtute to the other ingredients until moistened
Scoop the batter evenly into the prepared muffin cups.
Bake for about 15 minutes.
The same pastry+
2/3 cup of baking cocoa.
150g grinded chocolate
A bit rum (it depends to who you are going to make muffins :D)
Bake them the same way.
Wind cakes with Mascarpone filling.
1 glass of water
6 table spoon flour
1/2 tea spoon salt
1/2 tea spoon sugar
For the filling: 500g Mascarpone cream
100g whipping cream
Boil the water with butter, salt and sugar. When boiling, add flour (sifted of course) and mix until smooth.
Cool the pastry till 70-80 degrees (just whait a few minutes) then one at the time add the eggs and mix after each. But don`t whisk like eggs, cause then the pastry will become flat.
Put small pieces of pastry on the pan and bake for about 20 minutes in 190 degrees.
While waiting the cakes, make the filling.
Whish the eggs. Add sugar.
Whip the cream, add the egg mixture and Mascarpone. Then add rum.
Coll for a bit in the fridge.
They taste the best the next day.
